Bundt Cake Coconut
A tasty bundt coconut cake
Ingredients: 4 beaten eggs 2 cups sugar or (sucanat opt) 1 cup buttermilk 2 cups flour or (whole wheat pastry flour opt) 2 tsp baking powder 1/2 tsp salt 1 cup vegetable oil 1-1/2 cup coconut 1-1/2 tsp coconut flavoring
Frosting: 1 c sugar or (sucanat opt) 1/2 cup water 1 tsp coconut flavoring
Directions: Butter and lightly flour bundt pan.
In bowl add: Eggs, sucanat or sugar, buttermilk, flour, baking powder, salt, oil, coconut and coconut flavoring. Mix well and pour mixture into bundt pan. Bake 325 degrees 45 minutes or until done.
Frosting:
In saucepan boil: Sucanat or sugar and water for 5 minutes. Add coconut flavoring and pour over hot cake. Allow to sit for 10 minutes before removing from pan.
