Chicken Coconut
A crispy, tasty coconut chicken dinner
Ingredients: 3 -1/2 cup sweetened shredded coconut 1 tsp ground cumin 1/2 tsp cayenne pepper 2 boneless, skinless chicken breasts cut 1 pieces or may use skinless chicken tenders. 2 eggs Dijon mustard Salt and freshly ground pepper 3/4 tsp ground coriander
Directions: Preheat oven 325 degrees
Place coconut on baking sheet and bake until golden brown stirring frequently. Bake aprox 15 mins. Place coconut in bowl to cool. In food processor coarsely grind coconut in batches using on/off button.
Butter two large and heavy baking sheets.
In bowl add: Cumin, coriander, cayenne, salt and pepper. Add chicken to mixture and coat on both sides. Add eggs and toss well. Place chicken pieces in coconut completely coating. Put chicken in baking sheets, cover and refrigerate.
Preheat oven 400 degrees and bake chicken until crisp and golden. Be sure to turn pieces over once. Bake approx 15 minutes or until done and golden brown. Serve warm. tasty with mustard for dipping.
