Coconut Cream Pie
Delicious and easy to make coconut cream pie
Ingredients: 3 eggs beaten 1 cup sugar or (sucanat opt) 1/2 cup butter melted 4 tsp lemon juice 1 tsp vanilla 1- 1/3 cup coconut flakes 1 unbaked 9 inch whole wheat pastry shell or your choice
Directions: In bowl mix: Eggs, sucanat or sugar, melted butter, lemon juice, and vanilla. Mix well. Stir in coconut and pour mixture into unbaked pastry shell.
Bake at 350 degrees 45 minutes no longer. Cool before serving.
