Delicious coconut curry chicken dinner
Ingredients: 2-1/2 lbs chicken wings 1/2 tsp poppy seeds 1/2 tsp sesame seeds 1/2 tsp chopped mint leaves 1 to 2 T curry powder 1 tsp salt 3 T lemon juice 1/4 cup butter 1 cup chopped onion 1/2 cup flaked coconut 1 cup Pacific free range chicken broth 2 cups hot cooked rice
Directions: Wash chicken wings and pat dry. Disjoint chicken wings. Remove tips
In large bowl add: Poppy seeds, sesame seeds, mint, curry powder, salt and lemon juice. Add chicken wings and toss until wings are completely coated.
In large skillet: Add butter and melt, add onions and saute until golden. Add wings and spices and saute over medium heat turning wings to brown on all sides. Add coconut and broth. Cover and simmer over low heat 35 minutes.
Place hot rice in serving bowl and place hot chicken wings on top.
Sauce: Simmer uncovered drippings until thickened and pour over chicken wings and rice. May top with additional coconut (optional).
