Coconut Flour Recipe (Coconut Cake)
A coconut cake with coconut flour
Ingredients: 2 sticks butter 3 cups sugar or (sucanat opt) 25 c plain flour 1/2 cup coconut flour 1-1/2 c milk or (Blue Diamond Almond Breeze opt) 1 (14 oz) pkg. Angel Flake Coconut 2/3 cup Crisco shortening 6 eggs 1 tsp baking powder 2 tsp coconut flavoring
Frosting 1 stick butter 1 box powdered sugar 4 T almond milk (Blue Diamond Almond Breeze) or milk
Directions: In bowl cream: Butter, shortening and sucanat or sugar until fluffy. Add eggs and beat well. Add flour, baking powder and milk alternately to egg mixture. Beat well. Add flavoring and beat. Lightly stir in 1/2 pkg of coconut. Pour mixture in tube pan. Bake 300 degrees 1-1/2 hours Cool in pan.
Coconut Frosting:
In saucepan: Melt butter, add milk and powdered sugar. Add remaining 1/2 pkg coconut and stir. If too thick add more milk 1 tsp at a time. Spread frosting on top of cake.
