Coconut Macaroon
A sweet and tasty coconut macaroon
Ingredients: 1 cup butter 1 tsp vanilla 4 (1 oz) sqs unsweetened dark chocolate melted and cooled 2/3 cup sweetened condensed milk 2 cups sugar or (sucanat opt) 4 eggs 1-1/2 cup sifted flour or (whole wheat pastry flour opt) 2 cups coconut 1 tsp almond extract 1/2 cup finely chopped walnuts 1 cup chocolate chips
Directions: In saucepan melt : Butter and chocolate. Remove from heat, stir in sucanat or sugar. Blend eggs in one at a time. Add vanilla and stir in flour. Mix well. Divide mixture in half.
Spread half mixture in buttered and lightly floured 9 x 13 inch pan.
Filling: Mix 2 cups coconut, 2/3 cups sweetened condensed milk, 1 tsp almond extract mix well. Spoon filling over first half mixture in pan. Carefully spoon remaining mixture over macaroon. Bake 350 degrees 40 minutes or until done.
Remove from oven and sprinkle 1 cup chocolate chips on top. After chocolate chips melt sprinkle 1/2 cup walnuts. Allow to cool and cut in bars.
