Coconut Oil for Pie Crust
Make a pie with coconut oil
Ingredients: 1- 1/3 cup unbleached flour 1 tsp salt 1/3 cup coconut oil 3 T cold milk or (Blue Diamond Almond Breeze Milk opt)
Pumpkin Pie Filling:
3/4 cup sugar or (sucanat opt) 1/2 tsp salt 1-1/4 tsp pumpkin pie spice 2 large eggs 1 (15 oz ) can pumpkin 1 (12 oz) can evaporated milk
Directions: In bowl mix: Sucanat or sugar, salt, pumpkin pie spice.
In large bowl: Beat eggs and stir in pumpkin sugar mixture. Gradually stir in evaporated milk. Pour mixture into 9 inch pie shell. Bake 425 degrees in oven 15 minutes. Lower heat to 350 degrees and bake 40 to 50 minutes or until done.
Cool on wire rack 2 hours and serve. 8 servings
