Coconut Rice Curry
A yummy blend with coconut and curry in rice
Ingredients: 2 cups long grain brown rice 2 T olive oil 5 cups boiling water 2 tsp curry powder 1/2 cup raisins 1/2 cup toasted coconut
Directions: In large Dutch oven heat oil. Add uncooked rice and saute until rice is light brown. Add boiling water and curry powder. Cover and reduce flame to low and simmer 20 minutes. Turn flame off and let sit 15 minutes. Stir in raisins and coconut. Serve warm. Servings approx. 9.
