Coconut Shrimp
If you like shrimp you'll love this coconut shrimp
Ingredients: 1 lb. medium shrimp 1 quart vegetable oil 1 (12 oz) bottle plain seltzer water 1 cup plus 3 T flour or (whole wheat pastry flour opt) 1-1/2 cup shredded coconut
Honey Mustard Sauce for dipping:
1/3 cup sour cream 1/3 cup Dijon style mustard 1/3 cup honey 3/4 tsp ground cayenne pepper 1/4 tsp salt
Directions: Heat oil in 2 quart deep saucepan over medium high heat. Aprox 350 degrees. Pour seltzer in medium bow. Beat in 1 cup flour 1/4 cup at a time using a wire whisk.
In shallow dish add 2 T flour.
In another dish add coconut.
Take 5 shrimp at a time and lightly dust each with flour and coat with batter. Then roll shrimp in coconut.
Fry shrimp in hot oil aprox 2 minutes until golden. Drain on paper towels. Serve with Honey Mustard Sauce.
Honey Mustard Sauce
In bowl add sour cream, mustard, honey, cayenne pepper and salt.Sstir together until mixed well.
