Curry and coconut with chicken taste great


Ingredients:
6 skinned and boned chicken breasts
1/3 cup lemon juice
1 tsp salt
2 tsp curry powder
1/4 tsp ground ginger
2 cups flour or (whole wheat pastry flour opt)
2 tsp baking powder
1-1/2 cup milk or (Blue Diamond Almond Breeze opt)
3/4 lb coconut
3 c vegetable oil (olive opt)
curry sauce


Directions:
Preheat ovene 350 degrees.

Wash and cut each chicken breast half into 6 pieces.

In bowl:
Mix lemon juice, salt, curry powder, and ginger. Add chicken pieces and coat. Marinate chicken 30 minutes.

In bowl add :
Flour, baking powder, and milk. Drain the marinate from chicken adding it to the batter. Add chicken pies to the flour mixture then roll chicken in coconut. Heat oil in skillet aprox 350 degrees. Fry chicken 2 minutes on each side or until golden borwn. Place chicken on paper towel after browning. Place chicken in freezer bag and freeze in single layer. Defrost in single layer on cookie sheet.

Preheat oven 350 degrees.
Bake chicken aprox 20 minutes.
