Delicious Coconut Cake
A delicious tasting coconut cake
Ingredients: 1-1/2 cup boiling water 1 cup uncooked oats 1/4 cup softened butter 1 cup firmly packed brown sugar 1 cup sugar or (sucanat opt) 2 eggs slightly beaten 1 cup flour or (whole wheat pastry flour opt) 1 T baking soda 1 tsp salt 1 tsp ground cinnamon 1 tsp vanilla
Frosting: 1 cup coconut flakes 1/2 cup chopped pecans 1/2 cup butter melted 1/2 cup firmly packed brown sugar 1/4 cup cream 1 tsp vanilla
Directions: In small bowl pour boiling water over oats and let stand 20 minutes.
In mixing bowl cream: Butter and gradually add brown sugar and sugar mixing well. Stir in oats and add eggs flour, baking soda, salt, cinnamon and vanilla and mix well.
Pour mixture into a buttered and lightly floured 13 x 9 x 2 inch baking pan. Bake 350 degrees 40 minutes or until done.
Topping : Mix coconuts and pecans and sprinkle over cake.
In mixing bowl mix: Melted butter, brown sugar, cream or milk and vanilla and pour this mixture over cake.
Return cake to oven and broil 2 minutes or until golden brown. Cut into squares. Aprox 16 servings.
