Easy Coconut Cream Pie
A great tasting coconut cream pie
Ingredients: 1/4 cup plus 4 T flour or (whole wheat pastry flour opt) 1/3 cup sugar or sucanat (opt) salt 1-1/2 cup scalded milk 2 egg yolks, beaten 1/2 tsp vanilla 1T butter
Directions: In saucepan with scalded milk slowly add: Flour, sucanat or sugar, salt. Cook mixture then add beaten egg yolks to hot mixture. Cook 3 minutes and remove from heat. Add butter and vanilla. Cool mixture then pour into baked pie shell and cover with meringue. Brown meringue in 300 degree oven aprox 10 minutes.
Meringue : Using egg whites beat until stiff and add 2 T sucanat or sugar and gently stir in. Spoon meringue over pie mixture and brown. Watch pie as meringue will burn. Reduce heat and bake 5 mins longer.
