Ginger Coconut Chicken
A delicious mixture of ginger and coconut with chicken
Ingredients: 1/3 cup flaked coconut 2 T butter 8 large skinless, boneless chicken breasts 1 T finely chopped fresh ginger or tsp ground ginger 1/2 tsp salt 1 cup whipping cream 3 large firm ripe bananas, quartered 1 large ripe papaya, peeled, seeded, halved and sliced Lime wedges
Directions: Preheat oven 300 degrees.
On cookie sheet place coconut flakes and toast aprox 10 minutes in oven. Set aside.
In large frying pan add 2 T butter and melt. Add chicken breasts to butter and brown.
In small bowl add: Ginger 3 T coconut, fresh or ground, salt and cococnut
Pour ginger mixture over chicken while in pan. Add cream cover and cook on medium heat aprox 20 minutes or until done. Remove chicken from pan and place on large platter with bananas and papaya. Spoon sauce over chicken and sprinkle with remaining toasted coconut. Serve with lime wedges to be squeezed over chicken and fruit.
