Ice Cream Coconut Cream Pie
Light and creamy and easy to make coconut cream pie
Ingredients: 100 Ritz crackers 1-1/2 stick butter melted 3/4 of 1/2 gallon Bryers Vanilla Ice Cream 2 boxes instant coconut cream pie filling 1-1/2 c milk or (Blue Diamond Almond Breeze opt) 1 (12 oz) Cool Whip 1/2 cup shredded coconut
Directions: In bowl crush crackers add melted butter mix well and press in 9 x 13 pan.
In mixing bowl add: Vanilla ice cream lightly softened, add coconut pie filling and milk. Beat well and add mixture to cracker crumbs. Refrigerate until set.
Spread 1 carton Cool Whip (12 oz) over top of pie and sprinkle with shredded coconut. Refrigerate overnight.
