Nutty Coconut Bread
A nutty tasting coconut bread
Ingredients: 4 eggs 2 cups sugar or (sucanat opt) 1 cup vegetable oil 1 tsp coconut flavoring 3 cups flour or (whole wheat pastry flour opt) 1/2 tsp salt 1/2 tsp baking soda 1/2 tsp baking powder 1 cup buttermilk 1 cup coconut 1 cup chopped nuts
Directions: In bowl add: Eggs and beat well. Add sucanat or sugar, oil and coconut flavoring.
In another bowl: Sift together dry ingredients and add alternately with buttermilk to egg mixture. Stir in coconuts and nuts.
Butter and lightly flour 2 loaf pans. Bake 325 degrees 40 minutes. Let cool 10 minutes in pan before removing. Cool 1 hour before serving.
