Quick Coconut Bread
Quick and tasty coconut bread
Ingredients: 3 cups flour or (whole wheat pastry flour opt) 1 T baking powder 1/2 tsp salt 1 cup sugar or (sucanat opt) 1 cup shredded coconut 1 cup milk (Blue Diamond Almond Breeze opt) 1 beaten egg 1 tsp vanilla extract
Directions: In bowl add: Flour, baking powder, salt, sucanat or sugar and coconut. Stir mixture well.
In another bowl add: Milk, egg, vanilla and stir well.
Pour liquid mixture into flour mixture and stir. Cover and let sit 20 minutes. Pour into buttered and lightly floured 9x5x3 inch loaf pan. Bake 325 degrees 1 hour or until bread is dry when inserting a wooden toothpick in center.
Allow bread to cool in pan 10 minutes. Remove from pan and let cool before serving.
