Spicy Coconut Rice
Perfect spices for a great tasting coconut rice dish
Ingredients: 1 cup fresh grated coconut 1 small onion diced fine 1 cup fresh coconut milk from coconut 3 Habanero chiles minced 2 T butter 1 cup white rice or (brown rice opt) 1 cup Pacific free range chicken broth
Directions: In large skillet add butter and saute coconut for a couple minutes or until lightly brown. Add onion and saute till soft. Add the rice to onion mixture until rice turns opaque.
In saucepan add: Coconut milk, chicken broth and bring to a boil. Add the rice mixture to milk, reduce heat and simmer covered until rice is cooked aprox 40 minutes. Stir in chiles. Serving 4 to 6
