Spicy Sweet Potatoes with Coconut Milk
Yummy sweet potatoes with cococnut milk
Ingredients: 1 lb sweet potatoes 1 T salt 1 peeled onion 2 inches fresh gingerroot 1 clove garlic 2 -3 T olive oil 1 tsp cumin seeds (not ground) 2 whole green cardamom pods 1 bay leaf 4 peppercorns 1 inch cinnamon stick 1/2 tsp cayenne pepper 1 tsp coriander 1/2 tsp garam masala ( op) 1/2 cup coconut milk 1/2 cup water 1 T chopped coriander
Directions: Peel sweet potatoes and cut in 1 inch cubes. Place cubes in colander and sprinkle with salt and set aside 15 minutes.
Steam potatoes 10 minutes until barely soft.
Finely chop: Onion, ginger and garlic
Heat cooking pan over a medium flame add cumin seeds and cook until they splutter. Add chopped onion ginger and garlic Cook until onion is golden. Add remaining spices and allow to cook.
Heat oil and saute the steamed sweet potato cubes until golden brown. Remove and drain on paper towels. Pour coconut milk and water in the pot and bring to a simmer. Let it boil and bubble a few minutes then add the yam cubes, onion spice mixture and reduce heat. Simmer covered 10 minutes or until almost dry but still moist. When done set on a serving platter. May garnish with chopped coriander on top.
