Toasted Coconut Frosting
A delicious and easy to make coconut frosting
Ingredients: 2 T butter 2 cups shredded coconut 1 (8 oz) pkg cream cheese 2 T milk or (Blue Diamond Almond Breeze opt) 3 cups powdered sugar 1 tsp vanilla
Directions: In saucepan Melt butter, add coconut stirring continuously over low heat. Coconut should be lightly brown. Pour coconuts on paper towel and allow to cool.
Cream 2 T butter and cream cheese. Slowly add milk, powdered sugar and vanilla.
Spread frosting on cooled cake and sprinkle coconuts on top of frosting. If double layered cake frost each layer sprinkling with coconuts on top.
